We have recently been moving some of our equipment and storage areas around in the kitchen. In doing so we were able to completely empty this room. While toying around with some different ideas for the space we finally decided on what to do with it. It is now the beginnings of a room that it’s entire purpose and meaning is for the search to better understand food and its possibilities. We have not exactly come up with a unique name for this yet, but have already begun to experiment with some ingredients. We have a few lacto-ferments, vinegars and kojis all in the works. I will keep updating as things develop. This is still in its early stages, but we are very excited to start this process.
